I’m back with a new recipe, Instant Pot Green Applesauce. Some of you may be shocked. Others may not have noticed my absence. While some may be saying, “it is about damn time!” Honestly, I’ve been dealing with life stuff. I think we can all agree that life stuff sometimes sucks, and makes joyful things like recipe creating, a bit less joyful. Life stuff has been taking up too much of my brain matter, so recipe creation took a back seat for a bit. The actual creating was still happening, but the plating, photographing and posting was not. Since I have not been “busy” doing all those aforementioned P-words, I have been busy making the same recipes over and over each week, binge watching early season of Grey’s Anatomy (seriously go back and watch it), and snuggling with my sweet pups because that is what my life needs right now.
I have continued to run a few 21-Day Sugar Detox groups during my recipe posting absence, which requires brainstorming new ways to make green apples amazing. The 21DSD limits your consumption of sugars, including fruits. However, you are allowed to eat a green apple or green tipped banana everyday. Green-tipped bananas make me want to gag! I have been that way since I was a child. I used to tell my mom, “I can taste the green!” and spit it out. Now I just avoid bananas, or eat them when they are covered in brown spots. So when I do indulge in fruit during a detox I focus on green apples. That is the origin story of this recipe, trying to make something amazing, easy and done in 5 minutes. Well, it happened. You just need a fancy, dancy Instant Pot. Or a slow cooker will work too, but that will eliminate the done in 5 minutes part!
I shared this recipes a while back, when I did an Instagram takeover for The 21-Day Sugar Detox Instagram page. It only took 3ish months to finally get this recipe posted! This is a go-to recipe for me during the detox to curb cravings and recover from any low blood sugars (hypoglycemia) I may encounter. Most diabetics keep glucose tablets or candies laying around to recover from lows. Well glucose tablets and candy are not allowed on the 21DSD, so green apple sauce it is! Store bought applesauces are usually made with other types of apples that are sweeter, containing more sugar. They also add additional sweeteners to the applesauce, which is just plain crazy because this stuff is delicious just the way it is!
- Place cut/peeled apples, water, lemon juice, nutmeg, and cinnamon sticks into the Instant Pot
- Cook on manual, high pressure for 5 minutes
- (If using a slow cooker, use ½ cup water. Cook on high for 4 hours)
- Quick release pressure or allow to release naturally
- Open lid carefully
- Remove cinnamon sticks
- Blend apples into desired consistency with immersion blender
- Sprinkle with salt, stir and devour!
